But Is She Really Thrifty: Sweet and Sour Lentils

I cannot believe I've never shared this recipe!  We make it all of the time. It's my carnivore husband's favorite meal (outside of a massive steak or something).  It's very cheap and VERY tasty even if it doesn't look like much. This recipe comes originally from

Sweet and Sour Lentils
1 cup of lentils
2 1/2 cups of water
2 beef bouillion cubes
a bay leaf
1/4 cup of pineapple or apple juice
1/4 cup of apple cider vinegar
1/4 cup of brown sugar
1 clove of garlic, crushed
a handful of diced onions (about 1/4 to 1/2 cup).

First, start the water boiling.  I like to serve this on a bed of rice, so get that cooking too at the same time. Add your bouillion cubes, bay leaf and the lentils to the water. Let it boil until the lentils are soft (20 minutes or longer).  Drain any extra water once they are soft.  In another little pan saute your onions and garlic. Then add the juice, apple cider vinegar and brown sugar to the pan and stir until it's bubbly and a little bit thick.  Add this to the lentils and serve over the rice. These lentils freeze very well for a make-ahead meal as well.  Enjoy!
