But Is She Really Thrifty: Pancakes!

Pretty much everyone knows that breakfast for dinner is a great way to make an inexpensive meal.  Even I can make a pretty decent pancake with this recipe (along with my trusty cast iron griddle).  Pancakes and white rice and my kitchen nemesiseses. Do you have a kitchen nemesis? You know.. that ONE food that is tricky for you to make every time. Okay. I have two.
Easy Homemade Pancakes
1 c. all purpose flour
1 tablespoon baking POWDER
1/2 teaspoon baking soda
3 tablespoons sugar (these are sweet pancakes, even without syrup. Cut back if you want)
1/2 teaspoon salt
Dash of vanilla
1 egg
1 cup of milk
2 tablespoons vegetable oil

Combine the dry ingredients. Then add the wet and mix well. I let it sit for a minute or so and then cook on a hot griddle (I ONLY cook on cast iron. Sprinkle the pan with a little bit of water and if the water sizzles, it's good for pancakes. Turn them over when the bubbles on the pancake don't fill back in.  We eat pancakes with Coombs Family Farms 100% Pure Organic Maple Syrup Grade B, 32-Ounce Jug (bought on with giftcards from Swagbucks, naturally).  I think the next time I'll try making own our pancake syrup!

Feed all ruined pancakes to your 15 month old...he tries to eat dirt..a burnt pancake won't bother him too much.
