But Is She Really Thirfty: Quick prep dried beans


We eat a lot of beans in our house.  They're so cheap and so nutritious!  I know lots of people that complain about buying dried beans and the time they take to prepare.  But there's a way to cheat with dried beans!  First always sort beans to make sure there are no rocks or debris. I just throw them in a strainer/colander and run them under water while looking.  Then throw them in a pot and fill the pot with water so the beans are completely covered. Soak any kind of dried beans overnight.  Drain off the water the next morning and freeze the beans in 2 and 4 cup servings.  When you're ready to cook with them, throw them in boiling water for 20 minutes and you're good to go.  So go ahead and pick up a pound of Pintos the next time you're at the store and do not be afraid!
