But Is She Really Thirfty: Brown Rice and Lentil Casserole

I made this for dinner tonight on a whim. We'd never had it before but we do love brown rice and lentils taco-style. It was DELICIOUS! And so so so easy (and WAY cheap). Give it a try and save on your food budget by having at least one meatless meal a week.

Brown Rice and Lentil Casserole

* 3 cups broth (chicken or vegetable) I used chicken.
* 3/4 cup lentils
* 1/2 cup brown rice
* 3/4 cup chopped onion
* 1 teaspoon Italian seasoning
* 1/4 teaspoon garlic powder (I used more)
* 1 cup grated cheese--I used Chedder.


1. Preheat the oven to 300 degrees. I actually up'd this to 375.
2. Mix all ingredients except the cheese in a baking dish. I used a 7x11 funky divided Pyrex dish I got at a yard sale that had a glass cover.
3. Cover with foil and bake for 1 hour 10 minutes.
4. Then remove the foil, add the cheese, and bake for an additional 20 minutes. I only had to give the casserole about 5 minutes at 375.

And you can add veggies to this as well! You can add shredded carrots, celery, tomatoes. Whatever you have on hand! I think the cheese is really the only "critical" part to really make this VERY flavorful dish into a yummy dinner. We had peas as our side dish with it.
